My husband is always making us breakfast, so one day when he was actually sleeping in (something he never does). I decided to make him some breakfast. I was going to make him chocolate chip pancakes. Then I had an even better idea.
What about cake batter pancakes? I know I had read a recipe before, but I remembered it was complicated. So I completely winged it, and it turned out awesome!
I made the pancake batter according to the package, I made the 20-22 pancake serving size, because let’s face it the smaller serving size is basically a joke and would barely feed my husband and I. Plus, we like to reheat leftover pancakes for a quick breakfast during the week.
Then I simply added 1 Tablespoon of sugar, 1 teaspoon of vanilla, 2/3 cup of Funfetti cake mix, and some sprinkles (I didn’t add nearly enough to make them pretty, next time I’m going to go overboard so I can have pretty pancakes!)
Then I made a simple icing, 1 cup of powdered sugar, 1 tablespoon of milk, and ½ tsp of vanilla. Serve the pancakes with the icing and some sprinkles!
I didn’t tell my husband what they were at first, and his first reaction was definitely “Whoa!” They were so good! My favorite part was how fluffy the cake batter made them (Funfetti is a cake mix made with pudding, and pudding happens to be what a lot of restaurants use to make their pancakes good and fluffy.)

ReplyDeleteTechnically the word cake is used twice in the recipe title! So they'll like it twice as much, right? Especially if you top it with sprinkles, sprinkles are the key to every girls heart.
