Garlic and vegetable pasta perfect for lunch
 
 
Ingredients
  • 1 tablespoon olive oil
  • 3 cloves garlic, thinly sliced
  • pinch of red pepper flakes
  • 1 head of broccoli diced in bite sized chunks
  • 2-3 medium carrots peeled and diced
  • 8 ounces of corn
  • 16 ounces pasta
  • 2 tablespoons butter
  • 1 teaspoon garlic powder
  • salt and pepper to taste
Instructions
  1. Cook pasta according to directions.
  2. Meanwhile, drizzle olive oil in the bottom of your skillet. Add garlic and red pepper flakes, cook on medium high heat until garlic starts to become fragrant.
  3. Add your broccoli, carrots and corn, cook for about 10 minutes, stirring occasionally.
  4. Once pasta is cooked and drained, add butter and stir it in until melted., season with a teaspoon of garlic powder.
  5. Add pasta to the skillet, stir everything together and season to taste with black pepper and salt.
