Curried Sausages
 
 
Ingredients
  • 6 beef sausages
  • 1 tbsp olive oil
  • 1 onion thinly sliced
  • 1⅔ cup beef stock
  • 1 cup peas
  • 1 tbsp curry powder, we use Madras or Tandoori curry powder
  • 1 tbsp cornstarch
  • 2 tbsp water
Instructions
  1. Cook the sausages whole, I like to use the air fryer, but you could grill or pan fry it. Then cut into bite sized pieces.
  2. In a frying pan saute onions in olive oil medium heat until translucent. Then add the sausages to the pan with the curry powder, beef stock. Bring to the boil then reduce to a simmer.
  3. Mix the cornstarch with 2 tbsp cold water in a small dish. Pour into the pan with the curried sausages and gently mix through. Add the peas, and continue cooking for another 5 minutes until the sauce has thickened.
  4. Serve over mashed potatoes.
