Apple Pie Monkey Bread Muffins
 
 
Ingredients
  • 2 ½ cups white whole wheat flour
  • 1 Tablespoon baking powder
  • 1 teaspoon salt
  • 2 Tablespoon sugar
  • 1 teaspoon cinnamon
  • ⅓ cup butter, cold
  • 1 cup milk
  • Cinnamon sugar
  • ¼ cup granulated sugar
  • 1 ½ teaspoon cinnamon
  • Filling
  • 7 ounces Apple Pie Filling
  • ¼ cup butter, melted
  • ½ cup brown sugar
  • 1 tsp. vanilla
  • 2 tsp. cinnamon
Instructions
  1. Preheat oven to 425* open pie filling and dredge a knife through jar to chop the apples into bite sized pieces. Grease a cookie sheet.
  2. Mix together flour, baking powder, salt, sugar, and cinnamon.
  3. Cut in cold butter to flour mixture using a pastry cutter.
  4. Gently Stir in milk using a silicone spatula, add in apple pie filling. Continue stirring until a firm dough forms.
  5. Use a biscuit cutter or a drinking glass to cut out 6-8 biscuits, cut each biscuit into 8 pieces.
  6. Use a ziploc bag and place all of the cinnamon, sugar, and biscuit pieces. Shake until biscuits are coated with the cinnamon sugar mixture.
  7. In a saucepan on medium low heat, melt butter, add the rest of the filling ingredients.
  8. Stir well until combined and bubbly. Remove from heat.
  9. In a greased cupcake pan, evenly divide filling evenly among each cup.
  10. Evenly distribute biscuit pieces among each cup until they’re all filled.
  11. Bake at 425* for 10-12 minutes or until they start to rise and turn golden brown on top.
  12. Let cool for 5 minutes, turn pan upside down (on a surface like a cookie sheet) and gently tap to let them fall.
  13. Enjoy warm.
