Fresh Picked Strawberry Muffins

It’s that time of year where strawberries are filling the tables at farmer’s markets and grocery stores. I just had to have some, but had no idea what to use them in.

Then my husband lectured me, “You better find something to put them in before they go bad!”
So I dove into the family recipe vault, looking for something inspiring when I found this easy-peezy strawberry muffin recipe! It uses pantry ingredients and took less than 20 minutes to prepare (and only 30 minutes to bake!) This is hands down, our favorite muffin recipe. I’m kind of in love with these strawberry muffins.

I’d say that makes for a perfect breakfast recipe!

Here’s the recipe that makes a dozen muffins.

Fresh Picked Strawberry Muffins

Ingredients
  • 3 cups fresh strawberries (chopped into bite sized pieces)
  • ½ cup butter, melted
  • 1 cup milk
  • 2 eggs
  • 1 teaspoon vanilla
  • 4 teaspoon baking powder
  • 1 cup sugar
  • 3 cups flour
Instructions
  1. Preheat oven to 375* and make sure to grease muffin pans.
  2. In small bowl combine melted butter, milk, egg, and vanilla.
  3. In a large bowl mix flour, salt, baking powder, and sugar. Add strawberries to this dry mixture and make sure each strawberry is coated with the mixture.
  4. Pour in milk mixture and stir together.
  5. Sprinkle tops with sugar and bake for 30 minutes.
