How to quick pickle pickles

It’s that time of the year in our garden, we’re drowning in pickling cucumbers and we don’t always have time to can them. I’m also obsessed with watching cooking competitions, and chefs are always quick pickling. So I started quick pickling our pickles, and it’s actually pretty awesome. My pickle obsessed family loves having pickles on hand in the fridge and it’s such a simple process. Besides, I hear that eating entire cucumbers is all the rage on the internet right now.

The key to quick pickling is to make sure your brine is whisked really well, and to really press your cucumber slices to get the brine incorporated in there. I love how versatile the recipe is, once you have your basic brine down you can add what you like. Sometimes I add garlic, sometimes dill, and this time I even added some pickling spices.

Honestly I love how pretty these look, and the best part? They’re not processed so they stay perfectly crisp. If you love crunchy pickles this is the way to go. I store these in glass Pyrex containers in the refrigerator. If you’re looking for perfect slices I recommend using an upright mandolin, so simple to use to get uniform pickles.

Here’s the recipe! What would you add to make the most perfect crispy pickles? I feel like I should add some red pepper flakes to a batch and see what happens.

Quick Pickling Pickles

Ingredients
  • ½ cup vinegar (you could use any vinegar, I used white vinegar)
  • 1 TBSP sugar
  • 2 tsp kosher salt
  • 1 cup thinly sliced cucumbers
  • (optional extras- minced garlic, dill, pickling spices)
Instructions
  1. Whisk vinegar, sugar and salt together until sugar and salt are dissolved.
  2. Add vinegar mixture to sliced cucumbers, pressing the cucumbers into the brine.
  3. Add in any extra ingredients (minced garlic, dill, pickling spices, etc.)
  4. Refrigerate covered for at least 1 hour before enjoying, these will keep for two weeks in the refrigerator.
