Can I tell you a secret? I hate pancakes. They’re just ok, and because I don’t love them I only eat 1 or maybe 2 if they’re small so I’m always starving right after breakfast. I’m just not a fan. This makes AJ and Aliceana so sad.
So when we were binge watching Queer Eye with a box of Kleenex very nearby, because oh man that show makes us cry a lot. In one particular episode Antoni teaches a dad to make pancakes with an apple cinnamon topping. Apples and cinnamon for breakfast? Yes, please!
This morning after caffeinating I decided to dice up some apples and make my own apple topping. It was simple, and delicious, and I want to eat this for breakfast every day. I like how much the pancakes soak up the cinnamon syrup mixture. It tasted more like a treat than breakfast.
My husband will only ever eat pancakes with peanut butter and syrup, like a weirdo, and he said he would eat this over that any day, which is a win in my book.
Aliceana said this belongs in a 5 star restaurant, that’s saying a lot, she’s basically a 7 year-old restaurant snob. If they don’t have from-scratch mac and cheese it’s not the place for her, ha!
So this is a really simple way to make everyone happy on pancake day. Here’s how you make it.
Peel, core, and chop 2 apples into bite sized pieces. I peeled the apples, then used a corer/slicer to slice the apples into wedges then I sliced the wedges into smaller bite sized chunks.
Melt 2 tablespoons of butter in a small sauce pan, add apples, brown sugar, and cinnamon. Cook down for about 5 minutes on medium heat until apples are softened. Add real maple syrup, stir in, and remove from heat. Top your pancakes with this and it’ll taste like a treat.
Decadent Apple Cinnamon Pancake Topping recipe | Print |
- 2-3 large apples
- 2 tablespoons butter
- 2 tablespoons brown sugar
- ½ teaspoon cinnamon
- ⅓ cup pure maple syrup
- Peel, core, and chop apples into bite sized pieces.
- In a small saucepan melt butter on medium heat.
- Add apples, brown sugar and cinnamon to saucepan. Cook for about 5 minutes until apples are soft and caramelized, stirring frequently.
- Stir in syrup, remove from heat.
- Heap on top of your favorite warm pancakes.
